Glossary of winemaking terms:

*Fermentation: The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During fermentation, yeasts transform sugars present into alcohol

*Vinification: process of production of wine that includes fermentation and storage before bottling

*Maceration: is the process of soaking crushed grapes in a wine must to extract colour and aroma compounds as well as tannins from the grapes skins. This is where red wines get their colour and tannins

*Tannin/Tannicity: is a naturally occurring polyphenol (antioxidant ) present in the grape pulp, seeds and skins or in wood barrels. As a characteristic of wine, tannin adds both dryness and astringency, as well as complexity. Unsweetened black tea is a great example of nearly pure tannin dissolved in water.
